Omelet with Red Onions
A touch of salt and pepper
Fish sauce - just a splash
Chopped red onions (approximately 1/2 cup)
The recipe (serves one):
Break the eggs carefully into a bowl. Add in a splash of fish sauce and a touch of salt and pepper
Blend the egg yolks and whites
Add oil to Wok or a frying pan. Use plenty of oil
Pour the eggs into the Wok
Cook at a high temperature
Once the edges of the egg get firm, lift the omelet and check to view the color.
When the bottom of the omelet is golden brown, flip it over. Cook until both sides are light brown.
Serve over steamed white rice
This particular vendor will add in wild pumpkin and mushroom upon request. Steamed wild pumpkin is tasty!
